Menu 5/30-6/5/11

Wow, I can not believe it's almost June.  That means that in less than a month little man will be 4!  I feel like a terrible mommy because I have not planned anything in the form of a birthday party.


Monday
Breakfast- pancakes with strawberries and chocolate sauce
Lunch- Leftovers
Dinner- Beef Stew with field peas (yep crazy as I am I wanted stew in 90 degree weather)

Tuesday
Breakfast- Mini bagels with cream cheese and smoothies
Lunch- Leftovers
Dinner- Ribs with steamed broccoli, carrots and green beans

Wednesday
Breakfast-Cereal and fruit
Lunch- Soybutter and jelly sandwich's with chips
Dinner- Rotisserie chicken, salad and baked red potato's

Thursday
Breakfast- Blueberry bake and fruit
Lunch- Leftovers
Dinner- Chicken alfredo with steamed broccoli and carrots

Friday
Breakfast- Bacon, pancakes and fruit
Lunch- Turkey wraps with chips and fruit
Dinner- Leftovers/sandwich's/ Salad

Saturday
Breakfast- Leftovers
Lunch- Grilled Cheese and fruit
Dinner- Chicken nuggets, fries and fruit

Sunday
Breakfast- Egg-in-a-holes with smoothies
Lunch- Macaroni and cheese with spinach, fruit
Dinner - Cheesy crescent dogs, salad

I'm still being somewhat vague because I want to get fruit/veggies at the farmer's market or the local fruit stand but I'm not sure exactly what they have.  I have lots of frozen fruit in the freezer that I purchased so I need to use that up making smoothies.  This menu is planned around the food that we already have on hand, including this past weekends farmer's market buys.  hope fully now that my tummy is on the mend I will be able to stick to the menu.  :0)

Farmer's Market

We made our first trip to the farmer's market downtown Saturday morning.  Its small, very small compared to the one in Raleigh.  I think I counted less than 10 vendors there.  However, we got there early and it wasn't crowded yet.  We ended up getting a pound of green beans, a pint of strawberries and a huge bunch of broccoli for $6.  Immediately following this trip we were in Harris Teeter and would have had to pay about $10 for the same amount of produce.  I definitely want to go back.  I'm not sure if it was less crowded and there weren't as many vendors since it's a holiday weekend but either way I'm happy with our purchases.  There were more strawberries but little man and I ate a few....



Between the spinach I picked Saturday morning from our garden and the strawberries we got at the farmer's market plus some grilled chicken breast this was my dinner Saturday.  Yum!



There is a produce stand not too far from our house that is open in the summer and into the fall that I have gone to with my parents a few times.  I'm hoping that between the two of those and our garden we can have lots of really fresh and tasty produce this season.

I didn't get a picture but I steamed some of the farmers market green beans for dinner Sunday and they were DELICIOUS.  Sunday's dinner was as good as Saturdays.  Grilled pork chop, the above mentioned green beans and mashed red potato's which were from my parents neighbors garden.  I love having so much fresh produce.

Mommy Kind of Saturday

Today has been pretty uneventful.  I'm still fighting fatigue.  I actually just fell asleep on the bed watching Friends reruns while little man played.  Obviously that lasted all of 10 minutes before he was crawling on me and asking me questions and bringing me toys.  He did sweetly cover me up and snuggle for a minute.

So far today we have made a trip to the farmers market (more on that later), little man was disappointed they didn't have bananas...the kid loves a banana.  We also ventured to the grocery store and watched Walle. 

Tonight we made a picture for daddy.




Then it was time for dinner, bath and bedtime.  Bath time has become an issue, but only when I have to wash his hair.  Tonight was the worst.  He screamed/sobbed, hit me and tried to get out of the tub (he's not a violent kid the hitting and pushing happened as he was trying to get out of the tub).  This is the third time this has happened.  If I give him a bath and avoid washing his hair then he's his normal happy self.  He says that it hurts when the water gets in his ear.  I wanted to put cotton balls in his ear and hold them in with bandaids but he wasn't having it, so we had to do it the hard way.  It ended in sobs and lots of wet cuddles, lets just say I was soaked by the time I got him in his pajamas.  That was the "excitement" for the night.  Not the kind I like though.  So I guess a call to the doctor is in order Monday.  The hubby and I suspect that his tubes have come out or are in the process of coming out.  I'm not sure how that effects kids but something has drastically changed his bath time behavior.  So we will see what happens.  I guess I will be a nice mommy and not wash his hair until then.

Gardening Update!

Our garden is continuing to grow. I'm really excited about the progress. Due to the weather I went a while without weeding. I was still watering the garden on days when no rain was in the forcast and that made for a weedy mess. Yesterday I gave in and spent an hour and a half in the garden weeding. Is it perfect? Nope. But it does look much better. Here's a peek at the progress of our plants and my little dent in weeding.

I loosened the dirt around them a little because I plan to mix in a little more compost.  I also think that thi spinach may be almost ready!!  I'll have to do a little research on that to be sure.

Quick Update

So I've been missing this past week or so.  There has been a lot going on around here and just not much free time.  Here's a small recap.

1. Little man is having potty issues.  As in, he's intentionally holding it in.   He needs to go and is in pain and uncomfortable but won't do it.  After a trip to the doctor and x-rays of his tummy he is on two different things to move him along so to speak because he is VERY backed up.

2.  Its been a few days and little man is still holding it in.  We've gotten 2 poops out of him in 4 days.  Normally he goes a minimum of once per day.  Even with about 4 days worth of medicine he's not going and is starting to hold his pee again.

3. Oh did I mention that while holding his pee and poop he's also lowered his intake of food and fluids.  We are pushing fluids to help move things along but yesterday all we could get him to drink was 2 cups of apple juice, 1 carpison, and about 4 oz of soda....from 7 am-7-30 pm.  No where near his normal intake.

4. I'm in a wedding tomorrow and have been running around getting last minute things that I need.  I will be doing more running today between the rehearsal and rehearsal dinner.

5.  Last, most definitely not least, I'm 8 weeks pregnant.  I've been exhausted and crash onto the couch as soon as little man goes down.  That would be why our menu's have been thrown out the window the past couple of weeks.  I'm exhausted and going with the lets eat what is easy and sounds good come dinner time.  Usually this happens when it's just little man and I.  When the hubby's here he can cook.  Plus, some days certain things make me feel nauseous.  I'm lucky to have never experienced more than that with little man and so far I haven't with this peanut.

So I am fully aware that I need to post menu's and do an update on the garden, which is still growing, but it may be slow going.  I'm going to try to get some updates done next week and hopefully I will have some energy back soon.
